South Carolina micro-distillery brings full Southern flavor behind the bar.

Copper Horse Distilling, a micro-distillery located in Columbia’s riverside Vista district, produces premium, small-batch spirits in distinctive, handcrafted brands: Old Mill Vodka, Bulle Rock Gin, our Bold Rum, a special edition cream whiskey series, and our still-aging Bourbon. Created in the Southern tradition of utilizing local purveyors and handcrafting intricate detail, Copper Horse spirits are made exclusively from grains milled at Columbia’s historic Allen Brother’s Milling Company, home of Palmetto State staple, Adluh Flour.

In the saddle of Copper Horse is Richard Baker, who founded Columbia’s first micro-distillery after working at distilleries in Washington, Illinois, and Kentucky. While many distilleries hire consultants to learn the trade, Copper Horse takes a no-shortcuts approach.  We have spent the time and effort to learn our trade, and we feel you can taste the difference in every bottle.

The brand’s Old Mill Vodka, which offers a completely different nose and flavor than those of mass-produced vodkas, is distilled through a slow, meticulous process and lacks one production detail that leaves many vodkas with a sterile, medicinal taste.  At Copper Horse we don’t charcoal filter our vodka.  We want the grain notes to come through because that’s where the aroma and flavor come through. You get a nose of that locally milled grain before the first sip.  This is what we feel a craft spirit should be.  Something unique, something different.

This fall, the distillery will bottle a limited edition series of cream whiskeys in three flavors: Pecan Praline, Chocolate Salted Truffle, and Red Velvet Peppermint. Each cream whiskey, a blend of small-batch whiskey and silky heritage cream, pays homage to the traditional Southern recipe flavors of the Baker family.

In the corner of our distillery is a growing cluster of massive oak barrels, Each carefully charred barrel holds aging Bourbon and other whiskeys, of which the inaugural barrels will be ready for initial sampling in a few years.
